Chicken stew

Yields: 4-5 servings

Ingredients:

1. Chicken- around 300g
2. Onion- 1 small chopped
3. Green chillies- 4-5
4. Ginger garlic paste- 1 tsp
5. Potatoes- 1.5 medium
6. Carrot- 1 small
7. Curry leaves- 1-2 sprig
8. Bay leaf- 1
9. Cardamom- 1
10. Cinnamon- 1
11. Cloves- 4
12. Garam masala- 1/4 tsp
13. Salt- to taste
14. Coconut oil- 1.5 tbsp
15. Thin coconut milk- 1.5 cups
16. Thick coconut milk- 1/2 cup

Method:



1. In a mixer add bay leaf, cloves, cardamom, cinnamon and give a rough grind. You can also do this in a mortar pestle.



2. Heat oil in a pan. Add the roughly grinded whole spices mixture. Fry for a min. Add onion, curry leaves and green chillies. Saute well till onion turns translucent. Then add ginger garlic paste and saute till its raw smell goes.


3. Add chicken and potatoes. Saute for a min.



4. Add thin coconut milk along with required salt. Allow to boil until the chicken and potatoes are cooked half through.



5. When the chicken and potatoes are half cooked, add carrot and let it cook well.


6. Reduce the flame. Add thick coconut milk and garam masala. When it is just about to boil switch off the flame.

Serve this yum yum chicken stew with appam, nool puttu etc.
