Egg kothu porotta


Egg Kothu porotta... this yummy yum street food is such a simple delicious food that you can prepare even at home :) This street food which became a 'Superstar', that restaurants also started including on their menu :P Sadly here in UK, I couldn't find any restaurant that include this or if they do, it won't taste as good as I expect :(  We get ready made porottas here so I started making at home and satisfy my own expectations lol.
This with chicken salna or any other salna is the bestest combination !! Soon I will post recipe on chicken salna too. All days won't be the same... sometimes laziness hits me so I have this with raita which is also a good side ;) So no worries thinking salna is the only side. Nothing like that, God saved us by giving raita :P

Yields : 2-3 servings

Ingredients :
1. Porotta- 5-6 make into small pieces
2. Eggs-  4
3. Onion- 1 large
4. Tomatoes- 1 medium chopped
5. Ginger-garlic paste- 1/2 tsp
6. Green chillies- 2 small slit
7. Turmeric powder- 1/4 tsp
8. Red chilly powder- 1/4-1/2 tsp to your taste
9. Garam masala powder- 1/2 tsp
10. Curry leaves- 1 sprig
11. Coriander leaves - 1/4 cup chopped
12. Lemon juice - 1 tsp
13. Oil- 2-3 tbsp
14. Salt to taste

Method:
1. Heat oil in a pan , add the curry leaves, chillies and onions. Saute well until onions become translucent.
2. Add ginger-garlic paste , saute for 2 mins till raw smell goes.
3. Add turmeric powder , red chilly powder, garam masala and some salt ( I want some salt to be added in masala directly rather than adding whole salt towards the end :)). Saute for a min.
4. Add the chopped tomatoes and saute them until it becomes tender and juicy, then add coriander leaves. Give a stir.
5. Now pour the egg mixture, mix well with the onion-tomato masala and scramble it until it is 3/4th (almost) cooked.
6. At this stage, add the shredded porotta and remaining salt then mix well. **Check for salt and spicy :)
7. Take a flat spoon/ spatula. Hold it vertically and then chop the mixture until the porotta and egg masala blends well (This is the 'kothu' part so they called kothu porotta ;-) ) and cooked.
8. Add lemon juice and coriander leaves to garnish and then turn off the flame.

So get some porottas and start doing this yummilicious kothu porotta :D If you haven't tried this dish, you must do !! :)
