Asian prawn & veggie stir fry



Indo-chinese is one of my favourite cuisine. I think for many it is the same. This stir fry was a sudden plan as I want to finish a packet of prawns :D Because my mom called me and said not to cook any non-veg at home for the next 2 days as it was some special days on Hindu calendar.What to do... I suddenly started looking for a recipe to finish off this prawns :D.
Then I ended with this. This is a very quick easy recipe. You can make it in just 15 mins if you have everything ready and tastes reallyyyy really good.... It goes well with steamed rice or plain egg noodles. So what you are thinking for when you can make a quick lunch/dinner meal in a short amount of time.. Make it!!

Yields: 2-3 servings

Ingredients:
1. Prawns- 15-20 king prawns (180 g approx)
2. Baby corn- 3-4 diced in 1.5 inch ( you can also use mushrooms,zucchini,brocolli etc)
3. Spring onions- 4-5 white stem part chopped
4. Bell peppers/capsicum( I used red and green as I have yellow as babycorn ;))- 1/4 cup each
5. Garlic- 1 tsp finely chopped
6. Crushed chilly flakes- 1/2 tsp + 1/4 tsp ( garnish)
7.Salt- to taste

Sauce :
1. Soy sauce- 1 tbsp
2. Chilly sauce- 1 tsp
3. Corn starch- 3/4 tsp
4. Sugar- 1/4 tsp
5. Oil- 1/2 tsp

** Combine all the above in a bowl for the sauce

** Keep all the veggies ready

** Do the entire cooking in a medium flame

Method:
1. Heat oil in a pan. Add chopped garlic and chilly flakes, saute for 15-20 secs
2. Add all the veggies and saute them for 3-4 mins with a pinch of salt. (Do not over cook the veggies.. It should retain it's colour and crunch ;) )
3. Move this veggies to one side of the pan and add prawns along with the sauce mixture.
4. Mix prawns with the sauce and let it cook until prawns are almost done.
5. Now mix the veggies with prawns and saute for a min
6. Put down the flame and garnish with chilly flakes and chopped green part of spring onions.

** You can either make it dry or semi-dry. I left very little sauce :)

Serve with steamed rice/ egg noodles...and this is gonna be a hit!! :D Both of us didn't spare any single piece from the plate :D It was total clean :P
