Quick lunch 1- Easy-peasy tamarind rice


Yes!!! this dish is really an easy-peasy one.. my mom's first recipe in my blog :) For all of us our mother would be the best guide in cooking :) Mom's recipes are simple and the BEST !! COOKING was a nightmare for me after marriage and she was the one who made it easy. Amma simplifies the recipes as if cooking is nothing big. That made me all the way through here. Sometimes we will have leftovers especially the rice part. Rice is the heart of everyday cooking :P
This recipe is such an easy one that you can make the leftover rice a really delicious lunch meal for the next day.... cool right !? :) Bachelors, working wives and even for the home makers who find it hard for getting up early to prepare lunch ..make a note of this recipe. This is a life saver !! :P

Yields : 2 servings

Ingredients :
1. Cooked cold rice- 2.5 cups
2. Onion- 1 medium chopped
3. Red chillies- 2-3
4. Tamarind- small gooseberry size. Soak in 3-4 tbsp lukewarm water and extract the juice
5. Curry leaves- 5-6
6. Coriander leaves- garnish
7. Roasted peanuts- 2-3 tbsp
8. Mustard- 1/2 tsp
9. Turmeric powder- 1/4-1/2 tsp
10. Oil- 1 tbsp
11. Salt- to taste

Method:
1. Sprinkle the tamarind juice all over the rice and mix it up. Keep it in refrigerator or outside(winter time) for at least 2 hrs to overnight.
2. Place the rice outside for 15-20 mins to bring down to room temperature before cooking.
3. Heat oil in a pan. Add mustard seeds and curry leaves, let it splutter.
4. Add chopped onions and red chillies. Saute them well until onions turn into nice golden colour.
5. Add turmeric powder. Saute for a min
6. Add the rice, roasted peanuts and required salt to it. Saute them well to 3-4 mins.
7. Garnish with coriander leaves and switch off the flame.

Isn't it easy !?!? :D You can have this with any stir fry, chips, pickle, pappad..
Easy-peasy lunch/dinner !! :P
