Beef Ularthiyathu / Spicy beef stir fry



I was actually planning to post this recipe for Easter but we went to London for visiting our friends and so I missed :( Hope you all had an eggcellent Easter!! :)

This, Beef ularthiyathu is one of our favourites. It's spicy and flavorful, goes well with malabar parotta, rice, chapathi, pathiri.... Do try and I am sure you will like it :) I adapted this recipe from Ms. Maya's 'yummyoyummy' and made some minute changes.

Yields: 3-4 servings

Ingredients:

1. Beef diced- 400 gms
    Ginger- 2 tsp finely chopped
    Garlic- 2 tsp finely chopped
    Masala powder (recipe below)- 2 tsp
    Turmeric powder- 1/4 tsp
    Salt- 1/2 tsp
    Water- 1/4 cup

2. Onion- 1 large chopped
3. Green chillies- 2 slit
4. Ginger- 2 tsp finely chopped
5. Garlic- 2 tsp finely chopped
*You can substitute 4 and 5 with 1.5 tsp of ginger garlic paste
6. Masala powder (recipe below) : 4 tsp
7. Curry leaves- few sprigs
8. Turmeric powder- 1/4 tsp
9. Coconut oil- 2-3 tbsp
10. Pepper powder- 1 tsp
11. Salt- to taste
12. Coconut- 1/2 cup

Masala powder recipe (to roast and grind)
Coriander seeds- 1 tbsp
Dry red chillies- 6
Whole pepper corns- 1 tsp
Fennel seeds- 2 tsp
Cinnamon stick- a small piece
Cloves- 3
Cardamom- 2
Star anise- 1

*Heat a small pan. Add red chillies and roast it for 2 mins and then add coriander seeds, fry for 2 mins. Switch off the stove and add the remaining ingredients. Roast it for a min. When it is cooled down, grind to a smooth powder and keep aside. 

Method:





1. Add ingredients under number 1, and pressure cook until the beef is cooked well.




2. Heat oil in a pan, add chopped ginger and garlic and fry for a minute.

3. Add chopped onion, curry leaves and green chillies. Saute until the onions are translucent.


4. Add the cooked beef, turmeric powder, masala powder, salt and allow to cook until the remaining water is reduced half and turns to a semi gravy.

5. At this stage, add the pepper powder, coconut and mix well. Let it cook for another 2 mins and then switch off the stove.

*You can adjust the amount for red chillies and pepper powder according to your spice buds. The quantity which I have added will give a good spiced beef fry. 

Enjoy this yummy beef ularthiyathu with parotta, rice, chapathi, pathiri,.... :)
