Karachi halwa/Corn flour halwa

Yields : 1.5 cups

Ingredients:
1. Corn flour- 1/4 cup
2. Sugar- 3/4 cup
3. Water- 3/4 + 1/2 cup
4. Food colour- 1 tsp
5. Cashews- 2 tbsp chopped
6. Ghee- 3 tbsp

Method:

1. Roast the chopped cashews in a tsp of ghee and keep aside.

2. In a bowl add the corn flour, 3/4 cup of water, food colour and mix well without any lumps.

3. Place a heavy bottomed pan in medium low flame on stove. Add sugar and 1/2 cup water. Let it dissolve well by stirring.

4. Once the sugar is dissolved well, add the corn flour mixture and starts stirring.

5. Once it starts thickening, add some ghee and stir well which gives a glaze. Then add the roasted cashews and mix well. Keep stirring.

6. Adding ghee little by little stir continuously. It gives a glossy transparent finish while reducing. Once the halwa starts leaving from the sides, switch off the stove.

Either you can have it warm or transfer to a deep plate/cake pan greased with ghee. Let it cool for 2 hours and then cut into pieces.

Enjoy this Karachi halwa and have a sweettooth Diwali :)
