Spicy Diamond cuts/ Savoury fried biscuits


Spicy diamond cuts or Spicy maida biscuits is a very easy peasy tea time snack to prepare :) It's a tradition in Tamilnadu to prepare both sweet and savoury snacks on Diwali. As I didn't have murukku maker, I was looking for some savoury snack which can be prepared without any use of murukku maker and finally found this. I was wondering on the name tag of 'biscuit' for this snack. I felt as a pakoda because it tastes almost like a pakoda/pakora. 



Yields: 3 cups

Ingredients:
1. Maida/Plain flour- 1 cup
2. Jeera/ Cumin seeds- 1/2 tsp
3. Garlic- 2 medium pods
4. Chilly powder- 3/4 tsp
5. Amchur powder/ Garam masala- 1/4 tsp
6. Salt- as needed
7. Oil- 2 tsp+ for frying
8. Baking soda- a pinch
9. Water- as needed for preparing dough

Method:


1. Grind the garlic pods in to a paste. In a bowl add all the dry ingredients along with garlic paste and mix well.


2. Add 2 tsp of oil and water little by little and prepare a chapati/roti dough. Wrap it with a cling film or cover it with a damp cloth. Let it rest for 10-15 mins.


3. Divide the dough into 3 or more equal sized balls and roll each of them to a thin round shape by dusting with dry maida flour in between. 


4. With a pizza cutter or a sharp knife cut in diamond shape by drawing diagonal lines. 
P.S: This is the first time I'm doing so excuse the shape :P
With the help of flat spatula take out the diamond shaped dough or you can also pick it up easily by dusting your fingers with dry flour.


5. Heat oil in a deep frying pan and fry these diamond shaped dough in batches until golden colour turning occasionally.



6. Drain on to a paper towel and when it is cold, store in an air tight container.

* You can use ajwain/omam seeds in case if you don't like garlic flavour.
* Instead of maida flour you can also use wheat flour but I haven't tried it yet.
* If you like more spicy, you can add 1 tsp of chilly powder.
