Unniyappam


    Happy Vishu and Tamil new year to you and your loved ones !! 

Yields : 5-6 servings

Ingredients:
1. Rice flour- 1 cup
2. Wheat flour- 2 tbsp
3. Jaggery- 100 g
4. Water- 1 cup
5. Coconut bits/ grated coconut- 1/2 cup fried in ghee
6. Black sesame seeds- 1/2 tbsp fried in ghee
7. Ripe bananas mashed- 1/2 cup
8. Sugar- 3/4 tbsp
9. Bicarbonate of soda- 1/2 tsp
10. Oil/ghee- for frying

Method:

1. Heat pan in a medium flame. Add jaggery and water , Stir and heat it until the mixture becomes syrupy but not thick.

2. Add rice flour, wheat flour, sugar, bicarbonate of soda in a bowl. Add the mashed banana and jaggery syrup to it and mix well. 

3. Add fried coconut and sesame seeds. Mix well and let it rest for half an hour. The batter should be of dropping consistency like idly batter. 

4. Heat oil in unniyappa chatti/kaara chatti/aebleskive pan and drop a spoonful of batter into hot oil.

5. Fry them until golden brown colour by turning in between. 

These unniyappams will be crispier on outside and soft inside. You can store this in an air tight container for 2-3 days and also can refrigerate for upto 1 week.
