Blueberry muffins



Blueberry muffins are easy to make and can have for breakfast or with afternoon tea as a snack. I have adapted the recipe from mariasmenu and have halved the quantity.


Yields: 6 muffins

Ingredients:

1. Plain flour- 1 cup
2. Baking powder- 3/4 tsp
3. Salt- 1/8 tsp
4. Butter- 56.5 gms/ half of 1/4 cup or a stick
5. Sugar- 1/2 cup
6. Egg- 1 large
7. Blueberries- 1 cup toasted in 1/2 tsp of flour so that it does not sink down in the batter.
8. Milk- 1/4 cup
9. Vanilla essence- 1 tsp



Method:

1. Preheat the oven to 375F/180 deg. Line the muffin liners in a muffin pan.
2. Sieve the flour, baking powder and salt. Keep aside.
3. Beat the butter and sugar well till it is soft and fluffy. Then add the egg, beat in a medium-low speed and finally combine the vanilla essence.
4. Fold in the sieved dry mixture. Do not over mix. Then add milk, Combine.
5. Finally add the flour toasted blueberries and mix.
6. Spoon in the batter to the muffin liners and bake for 30 mins or until the skewer inserted comes out clean.
