Mexican vegetarian quesadilla


Mexican vegetarian quesadilla is very easy and a healthy recipe which has a good flavour from the mixture of raw and cooked ingredients wrapped in a tortilla. "Queso" means cheese in Spanish, along with some fresh vegetables and tortilla results in such an amazing taste. You can also prepare this with leftover rotis/ flat breads. 


Yields: 2-3 servings

Ingredients:
1. Tortillas- 6 
2. Mushrooms- 1 cup chopped
3. Onion- 1 cup chopped
4. Capsicum/bell peppers- 1/2 cup (any 1 or 2 colours)
5. Tomatoes- 1 cup chopped
6. Cabbage- 1/4 cup chopped
7. Cheese- 1/2 to 1 cup grated
8. Lemon- juice of 1/2 medium
9. Salt- to taste
10. Black pepper powder- to taste
11. Crushed chilli flakes- 1/2-1 tsp
12. Coriander leaves- 1-2 tbsp finely chopped
13. Butter/oil- 1 tbsp + 2 tsp ( for brushing tortillas)

Method:
Tortillas:

1. In a bowl, add 1 cup wheat/atta flour, 1/4 tsp salt, 1/2 tsp baking powder, 1 tbsp butter. Knead them by adding little luke warm water at a time until the dough becomes smooth. Knead well for 5 mins so that it makes the dough fluffy and soft.

2. Heat oil/butter in a pan. Add onions and saute till it is translucent. Then add chopped mushrooms and bell peppers, saute till it becomes tender.

3. Add crushed chilli flakes, required salt and pepper. Mix well, switch off the flame and keep aside to cool down.

4. After it is cooled down add cabbage, chopped tomatoes, coriander leaves and lemon juice. Mix well.

5. Make the dough into 6 equal balls and roll them like a chapathi/flat bread. Heat a skillet and place a dough tortilla and cook on one side, turn over and cook till you get small bubbles.

6. Once the bubbles are popped up, spread cheese on the tortilla. Add a generous amount of cheese on tortilla. I have used only very less amount to reduce some calories. You can add some more if you want. Then add the vegetable mixture on one side like in the above picture.

7. Fold and cook on both sides by turning over until it is cooked well. Cut the tortilla in half and serve.

 Enjoy this mexican quesadilla on its own or with any salsa or guacamole
