Quick lunch 3- Spinach side for rice with stir fry and pickle


The next recipe for a quick lunch is the spinach side. This is very easy to make and also quick which can be done in 5-7 mins. It goes well with any stir fry, pappad, pickle etc.


Yields: 2-3 servings

Ingredients:
1. Onion- 1/4 cup roughly chopped
2. Spinach-  180 g or a bunch
3. Red chillies- 2-3
4. Coconut- 2 tbsp
5. Salt- to taste
6. Oil- 3 tsp

Method:

1. Heat oil in a pan. Add onions, red chillies and saute well until it turns nice golden colour. Then add the washed spinach to the pan. Saute well for few mins.

2. When the spinach is cooked, add salt and grated coconut to it. Saute for 1-2 mins. Switch off the flame.

3. Let it cool, then transfer into the mixer jar. Grind it in semi-smooth consistency. 

Serve this spinach side with a drizzle of ghee or coconut oil on the top and enjoy with any stir fry, pappad, pickle etc.
