Mexican baked corn on the cob



Mexican corn on the cob is a super yummy snack with packed flavours of lime, butter etc. You can cook them on a barbecue or griddle pan to have a smoky flavour, then pressing and sprinkling with the ingredients. Here I have baked them by marinating which gives a pack of mild flavours.

Yields : 2 servings

Ingredients:
1. Corn on the cob- 2 peeled
2. Salt- to taste
3. Pepper- 1/2 tsp
4. Paprika powder- 1.5 tsp
5. Mayonnaise- 1/4 cup
6. Grated cheese mixed/any one- 1/2 cup
7. Coriander leaves- 4 tbsp finely chopped
8. Butter- 2 tsp melted
9. Lemon- 1/2  medium

Method:
1. Boil corn with required salt for 15 mins.

2. Add all the ingredients except butter. Mix well.

3. Take an aluminium foil and place the boiled corn and brush it with butter and marinate with mixed masala. Wrap it.

4. Place them on a baking tray and bake it in an preheated oven at 200 deg for 20-25 mins.

Serve this hot mexican corn on the cob with a lemon wedge.
