Quick lunch 2- Lemon rice



Some of my friends asked me to post the recipe of lemon rice. This is for you guys and for all the lovely people following kitchen yoga :) Lemon rice is a part of quick lunch. This with any stir fry especially with potato tastes the best. I compromised with fresh mango pickle and mangetout stir fry since I didn't had any potatoes at home.

Yields: 2-3 servings

Ingredients:
1. Rice- 1 cup
2. Onion- 1 medium
3. Green chillies- 2 small
4. Ginger- 1tsp finely chopped ( I don't like ginger so didn't add :P )
4. Lemon juice- 1 medium lemon
5. Turmeric powder- 1/4-1/2 tsp
6. Curry leaves- few
7. Mustard seeds- 1/4 tsp
8. Chana dal- 1/4 tsp (optional)
9. Coriander leaves- to garnish
10. Salt- to taste

Method:
1. Cook the rice and keep aside.
2. Heat oil in a pan. Add mustard seeds and chana dal.
3. Fry for a min till dal turns golden colour. Add curry leaves.
4. Add onion, green chillies, ginger and saute until onion is translucent.
5. Add turmeric powder. Saute for a min.
6. Simmer the flame and add lemon juice. Saute for 3-4 secs.
7. Add rice and mix well along with required salt till the rice is well coated with masala.
8. Switch off the flame and garnish with coriander leaves.

*After adding lemon juice don't saute the masala more than few secs. It will kill the fresh flavour of lemon.

Serve this hot lemon rice with any stir fry, pickle, pappad etc.
