Burger pav bhaji


You all must be wondering why I have used the name 'burger' pav bhaji. Bread, bun or any kind of such stuff are the least selling things in our home. So I usually find alternate ways to finish off before the expiry date as those come up with 3-4 days max expiry :(. During my last shopping, I bought a packet of burger buns and was struggling to finish it off.
I had enough burgers and still there were some more and suddenly I got an idea sirji :P I thought of making pav bhaji and have it with burger buns instead of real pav which became a real success.  That's it !! remaining buns were gone in 5 mins with bhaji. I made pav bhaji with 'homemade' pav bhaji masala powder and should say the fresh aroma of masala is such a divine. No store bought can beat it!! :)

Yields: 5-6 servings

Ingredients: 
1. Potatoes- 4 medium
2. Cauliflower- 1 cup chopped
3. Green peas shelled- 1/4 cup
4. Onions- 2 medium finely chopped
5. Tomatoes- 4 medium finely chopped
6. Ginger garlic paste- 1.5 tsp
7. Green chillies- 2-3 medium finely chopped
8. Capsicum- 1 medium finely chopped
9. Coriander leaves- 1/4 cup chopped
10. Pav bhaji masala- 1 1/2 tbsp (recipe below)
11. Lemons- 2
12. Oil- 3 tbsp
13. Butter- 3 tbsp
14. Salt- to taste
15. Pav/ burger bun(plain)- 8-10

Method:


1. Wash and boil potatoes, cauliflower and peas with little salt in a deep pan and smash them roughly.

2. Heat oil in a pan and add three fourth of chopped onions, green chillies and saute until golden brown.

3. Add ginger garlic paste and saute until raw smell goes.

4. Add half the quantity of chopped tomatoes and saute in medium heat for 4-5 mins til oil separates from the sides.

5. Add smashed vegetable mixture and chopped capsicum. Mix well and let it boil in simmer for 10 mins. Smash the entire mixture till everything blends well.

6. Add the rest of the chopped tomatoes, pav bhaji masala and required salt and mix well. Let it boil in medium heat for 3-4 mins and switch off. Garnish the bhaji with coriander leaves and 1.5 tbsp butter on top.
* Heat the rest of the butter in a tawa and pan fry the pav/burger bun until crisp and light brown by pressing 2-3 times.


Pav bhaji masala powder :



Ingredients:
1. Cardamom- 4 shelled
2. Coriander seeds- 1/4 cup
3. Whole black pepper- 1/8 cup
4. Cumin seeds- 1/8 cup
5. Red chillies- 10 medium
6. Fennel seeds- 1.5 tbsp
7. Cinnamon- 5 inch long
8. Dry mango powder- 2 tbsp

Method:
1. Dry roast all the ingredients except mango powder in medium low heat. Roast until you smell the nice divine aroma.
2. Then add dry mango powder and roast for a minute and switch off. Let it cool down.

3. Then grind to a fine powder in a mixer. Store the masala in a dry container.


Enjoy the hot hot pav bhaji with lemon wedges and remaining onions :)
